Feeding the 5000
Okay…we don’t actually have 5000 little mouths to feed at Equippers Kids - but we DO have a dedicated Chef whose mission is to ensure tasty nutritious meals that get eaten, not played with. Which is easier said than done, as we all know tamariki can be fussy eaters.
Zeonie, our Chef, shares an all-time favourite. This is a never fail recipe and perfect as we head into colder weather.
ZEONIE’S PUMPKIN & KUMARA SOUP
3/4 tbl crushed garlic
3/4 kg pumpkin roasted
1/2 kumara roasted
1 large onion diced
1/2 tbl curry powder
1/4 tbl cumin
1/8 tbl dried ginger
750 ml stock (vege or chicken)
1 tbl dried parsley or fresh coriander
375 ml milk
75 ml cream
Method:
Chop the pumpkin and kumara and lightly coat with oil - bake for 20-30 minutes at 180 celcius until soft (we use baking paper for easy clean-up) .
in a big pot, fry onion, garlic and spices in a little oil or butter. Add the stock and roasted vegetables. Bring to the boil and blitz with an immersion blender. Add the milk and cream (this cools it down so it can be enjoyed straight away) - garnish with herbs
ENJOY with garlic bread or toast of choice.
